Loaded Keto Cauliflower Casserole is an easy meal that provides the energy your body needs to burn fat.

This is a new recipe that I made over the weekend and I thought I would share it with you guys. This is a low carb, high fat, ketogenic cauliflower casserole that is loaded with macronutrients and is keto friendly. It is whole 30 compliant too. I hope you enjoy!!

Cauliflower is a naturally low carb food that is rich in vitamins and nutrients, so it is a great food to use when you are following a ketogenic diet.

Any casserole, whether cheesy or not, requires a solid foundation. To guarantee that everyone digs in, we believe cheesy is the way to go. The beauty of a casserole dish is how easy it is to prepare and how difficult it is to make a mistake.

We’ve included a basic cheese foundation for this casserole dish that you can use for any casserole dish. The mixture of cream cheese and sour cream gives this meal a creamy, somewhat tangy flavor, and we used Monterey and cheddar cheese for the cheeses. You don’t want the creamy foundation to overwhelm the rest of the components, so use whichever cheeses you have on hand.

Bake And Layer

Making a casserole dish has no specific rhyme or sequence. Ultimately, everything is cooked together in the same dish to blend into one another. It’s simple to make, and you may use any fillings or toppings you like.

The only thing I would add is to make sure everything is well covered with cheese sauce before baking. That will ensure that each mouthful is excellent! You won’t need to bake to finish this dish since everything has already been cooked.

As a result, you may experiment with the cook time. You should certainly make sure that all of the cheese has melted and that everything is hot, but if you’re in a hurry, this dish may be baked and served in no time!

Tip: To gently brown the cheese, put on the broiler for 1-2 minutes towards the end!

Keto Cauliflower Casserole with a Toasted

Bacon, chives, and cheese — all the tastes of a loaded potato, but in a cauliflower casserole.

  • 8 person servings
  • 297 calories per serving
  • 15-minute prep time
  • 30 minutes to prepare

Instructions:

  • Preheat the oven to 375 degrees Fahrenheit. Using nonstick frying spray, coat a 913 casserole dish.
  • In a large microwave-safe dish, combine cauliflower florets and 3 tablespoons of water. Microwave for 7-8 minutes, steaming until soft, covered with wet paper towels. (Steps are shown in the video above.)
  • Meanwhile, add half of each cheese, half of the bacon, half of the green onions, sour cream, cream cheese, mustard, herbs and spices in another large mixing bowl. Toss the cooked cauliflower florets with the water in the basin until evenly covered.
  • Top with the remaining cheese, green onions, and bacon in the prepared baking dish.
  • Bake for 20 minutes, covered with foil. Remove the cover and bake for another 5-10 minutes, or until the cheese is bubbling and browning. If desired, finish with a browned crispy cheese topping by broiling for 1-2 minutes towards the end!
  • Serve immediately with a green onion garnish.
  • It’s best to keep it in the fridge for up to 5 days in an airtight container.
