If you’ve tried low carb diets in the past, you know how hard it can be to stick to it. With a few swaps, you can turn this conventional recipe on its head. Instead of potatoes, use cauliflower. You can swap the flour for almond flour, the butter for coconut oil, and the milk for heavy cream. Buttermilk is an important ingredient, so don’t skip it!

The ketogenic diet has been around since the 1920s. Ketogenic diets tend to focus on high fat, low carbohydrate foods that are ketogenic (able to be used by the body as fuel). In the last couple years, keto diets have gained a lot of popularity because they are often used as a way to lose weight.

Years ago, when I was a first-time vegan, I had to cook a lot, because I couldn’t find anything that tasted like chicken. I wanted to eat like a human but I couldn’t find anything like chicken. I would cook tofu, I would cook tempeh, I would buy veggie crumbles, I would make “chicken” out of tofu and tempeh, I would make “chicken” out of starchy vegetables, I would eat fake “chicken” made from soy protein. It was a hassle.

While Matt has never been a fan of chicken pot pie, we decided that having a Pot Pie Keto in our arsenal was a must! It’s wonderful all year and suitable for all of your friends and family, whether they’re on the keto diet or not. To make this meal come to life, we utilize a combination of onion, celery, carrots, and mushrooms, topped with a delectable low-carb biscuit.

Pie Crust vs. Low Carb Biscuit?

It’s a tough choice to be made, but after having tried this keto pot pie, I think i’m officially a fan of the biscuit. Not only can I eating more than one biscuit, but it’s guaranteed to come out right every time.

With a crust, you run the risk of underbaking it, not getting it crispy enough, or having it go soggy when stored for leftovers. The crust cannot be stored separately from the biscuit! I also prefer a high filling-to-crust/biscuit ratio because the filling is where the good stuff is, thus I don’t want a potentially subpar crust to hide the tasty filling!

Keto Pot Pie

A low-carb almond flour biscuit tops a hearty chicken pot pie.

Time to prepare: 45 minutes

Instructions:

Biscuits for Keto

  • Preheat the oven to 350°F and prepare a baking sheet by lining it with parchment paper.

  • In a medium mixing bowl, melt the butter. Whisk in the remaining ingredients until well blended.

  • Using a cookie scooper or your hands, divide the mixture into four equal portions and set on the prepared baking sheet. Slightly flatten.

  • Bake for 15-17 minutes, or until golden brown around the edges. Allow for a five-minute cooling period before handling and laying on top of the pie filling.

Filling for a Pie

  • In a large skillet or pot, melt the butter over medium heat. Add the carrots, celery, onion, mushrooms, and a pinch of salt and pepper to the pan once the butter has melted. Sauté for about 5 minutes, or until the vegetables are tender.

  • Combine the chopped chicken, broth, heavy cream, thyme, and xanthan gum in a large mixing bowl. Bring to a boil over medium-high heat, then lower to a low heat and continue to cook for 5 minutes, or until thickened and warmed through. Season to taste with salt and pepper as needed.

  • Stir in the fresh parsley, then divide the contents evenly among 4 (6-8 ounce) ramekins, leaving 1/4 inch of space at the top. Serve with a biscuit on top of each pot pie!
