Over the holidays, I’ve been snacking on keto eggnog. It’s delicious, but it’s also got a significant calorie count. I wanted to make it at home, but I couldn’t find a recipe that I liked. So, I did what any normal person would do and made my own.

Eggnog is one of my favorite holiday treats, but it’s always been hard to find the right balance of sweetness and nutty richness. Most recipes I’ve found for homemade eggnog are too sweet, and use a whole bunch of other ingredients that I don’t like. I wanted to make a version of eggnog that was just eggnog, with no other ingredients, and only a single ingredient that I would like to use every day for the rest of my life: butter.

The Best Low-Carb Eggnog Recipe!

Although eggnog is great all year, it is not keto friendly. However, I discovered an easy way to duplicate the milk contained in eggnog, so you won’t be able to tell the difference! You can attain the proper thickness for your eggnog by using heavy whipping cream as the majority of the foundation and lightening it up with flax, almond, or cashew milk. Aside from the milk, everything else, even the optional whiskey you add *wink face*, is excellent for a low-carb diet.

I’m not sure who decided that egg nog is only served around the holidays, but whomever made that choice shouldn’t be allowed to make any more. This has become one of my favorite drinks, and it appears to be a great way to conclude any night of the year. Does it get any better than this? It’s thick, it’s rich, it’s creamy, and it’s low carb. You’ll want to prepare this keto eggnog for your friends and family this Christmas season, whether or not you like eggnog! **Cooked Eggnog: If you like to cook your egg nog, simmer the heavy cream and flax milk together in a saucepan, then remove from the heat and whisk in the lightened color yolks and swerve combination, as well as the peaked whites. Return to the fire and stir until everything is thoroughly mixed before cooling.

Keto Eggnog

Instructions:

  • Set the egg whites aside while you separate the eggs into two medium bowls.

  • Beat the yolks with a whisk until they are pale yellow in color. Add 3 tbsp confectioner sugar and mix again once the color has lightened.

  • Whisk together the heavy whipping cream, flax milk, and nutmeg in the yolk mixture. Remove from the equation.

  • Whisk the egg whites with a hand mixer until soft peaks form. Whisk in the remaining tbsp of swerve until medium peaks form.

  • Whisk the whites into the yolk mixture until they are completely mixed. Refrigerate for 3-4 hours.

  • The mixture will separate slightly after refrigerated, so whisk it again before serving. If desired, sprinkle more nutmeg to the top.

I’m not a fan of eggnog, but I do love the idea of eggnog beverages and have seen them pop up on a few recipe sites here and there. The standard eggnog recipes all call for whipping up eggnog milk, but I’ve never liked that idea so I came up with my own recipe. The recipe consists of a base of heavy whipping cream and eggnog (eggnogs are low carb/keto so you can use either store bought or make your own). I’ve added some powdered erythritol and stevia to sweeten the drink and to avoid adding any extra carbs, I’ve used a little bit of stevia in my recipe as well..
